Coming Soon ~ Square One Distilled Spirits!
Since opening our doors in February of 2006 we have dedicated ourselves to brewing exceptional beers for your enjoyment. Square One announces that we are fully licensed to distill our own spirits and have joined in on a growing trend in the US and around the world. At present there are well over 100 micro distilleries in the United State and this number is growing. The possibilities for flavor combinations are endless. Like our craft beer with an emphasis on small batches, quality ingredients and attention to detail, we will look forward to making fine tasting spirits for you to enjoy. A little history and a little education – i.e. why it makes sense for us to distill spirits. The first step in distilling is something we do already, make beer. If you like our beer you’ll love our spirits. We are testing batches and refining our recipes to create spirits that are unique and full of flavor. Spirits types i.e. vodka, rum etc. are determined by the fermented material they are distilled from. Whiskey, vodka, gin and most schnapps are made from distilling a beer made from grain. Brandy is made from fermented grapes; Rum is fermented sugar cane or molasses. Tequila is fermented pulp of the agave plant. Like our beers most of our spirits will have a twist or just a little more to them. Our first release will be a series of infused spirits like Square One Rum spiced with vanilla and blood orange and Genievre, a Dutch gin infused with fresh fennel, coriander, cardamom, lemon peel and, of course juniper. We will have vodka (still experimenting and will update you soon with what we develop.) Square One Brewery and Distillery will have two stills. The first is a 16 liter still from Iberian Copper works in Portugal. We are running test batches in this still. We have bought a 50 gallon still from Vendome Copper Works in Louisville, KY and it will be delivered soon and construction will begin for the distilling room which can be viewed from the bar area. In the United States breweries and distilleries were a large part of American commerce. Rum was the first distilled spirit in the United States, as early as 1657 in the Boston Area When the British enforced the Blockade during the American Revolution; the delivery of sugar cane from the Caribbean to the United States was interrupted. So the very independent and motivated distillers in the new nation turned to corn and other grains to distill spirits which created two fine traditions here. The first is our fine whiskeys and bourbons that are uniquely American made from corn and rye. George Washington ordered the first federal tax ever on whiskey and had to deal with the Whiskey Rebellion in 1794. This gave rise to another fine American tradition, Moonshining! After George Washington left the presidency he became the largest whiskey distiller in the United States. We at square One Brewery and now Distillery plan on utilizing our expertise in creating fine beers as the base of our production of spirits. We want to create something different and tasteful as we explore the many different types of spirits that will become the hallmark of Square One Brewery and Distillery. |
