Square One Distilled Spirits! Now Available Spirits of St. Louis ! The first of our distilled spirits are available in bottles! Spirits of St. Louis Rum and Vodka are available at the bar, and in bottles!
Since opening our doors in February of 2006 we have dedicated ourselves to brewing exceptional beers for your enjoyment. Square One announces that we are fully licensed to distill our own spirits and have joined in on a growing trend in the US and around the world. At present there are well over 100 micro distilleries in the United State and this number is growing. The possibilities for flavor combinations are endless. Like our craft beer with an emphasis on small batches, quality ingredients and attention to detail, we will look forward to making fine tasting spirits for you to enjoy. A little history and a little education – i.e. why it makes sense for us to distill spirits. The first step in distilling is something we do already, make beer. If you like our beer you’ll love our spirits. We are testing batches and refining our recipes to create spirits that are unique and full of flavor. Spirits types i.e. vodka, rum etc. are determined by the fermented material they are distilled from. Whiskey, vodka, gin and most schnapps are made from distilling a beer made from grain. Brandy is made from fermented grapes; Rum is fermented sugar cane or molasses. Tequila is fermented pulp of the agave plant. Like our beers most of our spirits will have a twist or just a little more to them. Our first releases included a series of infused spirits like Spiced Rum infused with vanilla and blood orange and Genievre, a Dutch gin infused with fresh fennel, coriander, cardamom, lemon peel and, of course juniper. Square One Brewery and Distillery will have two stills. The first is a 16 liter still from Iberian Copper works in Portugal. We ran a few test batches in this still. Our main still is a 50 gallon still from Vendome Copper Works in Louisville, KY and it is in place in the distilling room which can be viewed from the bar area. In the United States breweries and distilleries were a large part of American commerce. Rum was the first distilled spirit in the United States, as early as 1657 in the Boston Area. When the British enforced the Blockade during the American Revolution, the delivery of sugar cane from the Caribbean to the United States was interrupted. So the very independent and motivated distillers in the new nation turned to corn and other grains to distill spirits which created two fine traditions here. The first is our fine whiskeys and bourbons that are uniquely American made from corn and rye. Then, George Washington ordered the first federal tax ever on whiskey and had to deal with the Whiskey Rebellion in 1794. This gave rise to another fine American tradition, Moon shining! After George Washington left the presidency he became the largest whiskey distiller in the United States. At Square One Brewery & Distillery we are utilizing our expertise in creating fine beers as the base of our production of spirits. We want to create something different and tasteful as we explore the many different types of spirits that will become the hallmark of Square One Brewery and Distillery. What we are working on:
JJ Neukomm Whiskey

Our whiskey has been aged in small casks until it picks up the perfect taste &
color. We begin with a blend of
toasted malts & cherry wood smoked malt to craft an our own special character
that you will not find in any whiskey at any price.
Spirits of St. Louis Vodka
~
This vodka is made with all Midwest grown barley, wheat & corn, grown within
fifty miles of the distillery. It
has been distilled 10 times and filtered twice to give it the great smooth
flavor for you to enjoy.
Island Rum
~
Our rum is made from 100% golden cane molasses directly from the sugar cane
fields of Louisiana. It is fermented
and run through our still to capture the true flavors that are reminiscent of
rum from the Caribbean.
Green Flash
~
The spiced rum begins with our crystal rum, then is aged for a short amount of
time in oak with vanilla bean and blood orange to bring you this flavorful
artesian rum.
Island Sunset
~
Our dark rum also begins with our crystal rum which is aged in
oak casks. This process gives
it the character amber color and adds slight vanilla overtones and mellowness.
Agave Blue
~
Our version of an American Tequila is the 2nd tequila distilled in the United
States. We import Agave nectar from
Tequila, Mexico and distill it here.
Agave Blue is a ______ tequila which has rested in oak and has a nice smooth
finish.
Spirits of St. Louis Gin
~
Our gin is an American gin, well balanced
with a low Juniper and a
higher citrus flavor. We use nine
different botanicals including hops to balance this traditional sailing spirit.
Aquavit
~
The top selling spirit in Scandinavia, the name is derived from the Latin aqua
vitae which translates “water of life”.
Ours is lightly aged in oak and made from our neutral grain spirits.
It’s predominant flavoring
comes from caraway seed, with hints of lemon peel, cumin, cardamom and dill.
Hop Schnapps
~
This spirit started with a malted beer distilled the redistilled through
Amarillo Hops to create a truly unique spirit.
If you like hoppy beers, you will love this German-style schnapps.
Vermont Night
~
A whiskey based spirit aged in oak, infused with orange, lemon, cloves cinnamon
stick, & vanilla bean, and sweetened with a true Vermont maple syrup.
It is a great night cap and can be served straight up, on the rocks or
even in your coffee.
Citrus Mello Cello
~
Mello Cello is based on the Italian liqueur Lemon Cello.
Ours is rum-based, made from blood oranges and sweetened with Agave
Nectar.
Ginger Cello
~
This is a fresh ginger infused neutral grain spirit
sweetened with Agave nectar.
